Melchior is Davy Spiessens Belgian interpretation of the Barley Wine style. At about 11% alcohol by volume Melchior is true to style by being heavly malt based using pilsner, wheat, munich and cara malts. It is brewed using 2 English hops Challenger, East Keng Goldings and the Czech Saaz. Davy adds the Belgian influence by using mustard seeds to balance out the sweetness in the beer.

Hops: challenger, EK goldings, Saaz

Spices: mustard seeds
Primary fermentation: 1 week at 23°C
Secondary fermentation: 3 weeks at 15°C
