Notes from Lorenzo Dabove: “Winking amber color with orange reflections plus cream colored and persistent foam reveal to us the use of torrefied malts promising us biscuit & roasted flavors.
A nice “cohabitation” between strong caramel and fruity (plums and morello cherry) notes and peppery and herbal notes coming from a long-sighted use of aromatic hops.
Warm and vinous in the palate with an appropriate dryness giving it a good balance between sweet fruity, roasted, slightly smoked notes and a long, dry, very bitter aftertaste.
Sella del Diavolo (devil’s saddler) is a good pairing with Sardinian best food such as roast lamb and piglet slowly cooked in the skewer and with medium-matured not too salty cheeses. Thanks to biscuit notes, it could be very “gourmand” with not too bitter chocolate, almond cakes and dried fruits.”
