The brewing process of our beer specialty from Leipzig begins with the milling.
Barley and wheat malt is being weight and then crushed to whole-corn in a 4-roller mill.
Afterwards the whole-corn is being transported via a screw conveyor to the copper mash tun in the brewery. Grinding time is about 45 minutes.
The malt corn is being mixed with brewing water. During the 2 hours of mashing the starches included in the malt are being converted to malt sugar.
In the copper lauter tun the solids and liquids of the malt sugar solution generated during the mashing are being separated.
The result is wort. The solid substances (also called "Treber") are primarily malt husks and are used as forage cereal.
Hops are added to the wort and this mixture is being boiled in the wort pan for about 1 hour.
