The Kitchen

We have a huge selection of dishes but the one piece that really sets us apart without a doubt is the meat we grill over live charcoal. Our meats are cooked in the fireplace at the center of the brewpub over live charcoal. Sausages, chicken wings, braciole of pork, spiedini, sottofiletto of calf and bisteccazze are all cooked on the fireplace. We also serve crostoni, salads, cold and warm sandwiches, taglieri appetizers, handcrafted mountain cheeses, along with bread and fresh cakes.

The Kitchen with the Beer

For Birra Troll the new frontier is cooking with beer. What started as a game for us by giving life to dishes with beer has lead to the creation of a number of dishes that are on our menu and hopefully many more to come.

La trota affumicata - we marinate the trount in Panada and then smoke it over faggio wood.

Le palle del Troll - Bread made with beer instead of water that is later fried into small litles balls. They are served with different sauces.

Il filetto di maiale - pork tenderloin marinated in Shangrila and grilled over the fireplace and served in cut style.
