Not designated AOC. The reason is, that every vintage needs to be sent for certification. By the time all of the paperwork is done, we would be receiving old cider for our customers in the US. However, the Domaine Dupont Cidre Bouche Fermier meets all the standards to be classified an AOC cider in all aspects of production. Some requirements include mandatory orchard cultivation practices, specific apple varieties to be used, maximum yield of juice per ton of apples, and minimum length of fermentation.

History:
The current owner/cider-maker Etienne Dupont took over the Domaine from his father Louis and grandfather Jules. He improved the 17 hectare farm and planted an additional 10 hectares.

Tasting Notes E. Dupont 2000:
Appearance:	Yellow orange, fine persistent froth, cloudy with sediment
Nose:	Tremendous complexity [apples, citrus, pine, lime, butter, leather] with notes of wood, roast cacao
Flavor:	Apple, touch of wood, full body with a touch of sweetness in the balance.

Tasting Notes E. Dupont 2001:
Appearance:	Gold orange yellow. Powerful condition like champagne.
Nose:	Fatty woody, slight vegetation
Flavor:	Strong acidic citric quality. Tannic mustiness in back with a big grapefruit tang finish.
