Now the spice in the Läuterbottich (or Maischefilter) is released from the Malztrebern. The release is an excellent feed for livestock by the way. The result of this brewing procedure is the spice. In it are all of the soluble materials from the Malzkorns.
During cooking the hop is added to the spice. The more hop, i.e. the more bitter and Gerbstoffe to be admitted, the more hops is added the more this will make the beer taste harsh. The spice is cooked in the Sudpfanne for about 1 1/2 hours.
In the Whirlpool the Trubstoffe is then separated. The beer spice is now finished.
