The carefully selected natural umbel hops which we use exclusively are grown in southern Germany, in the Hallertau and Spalt regions near Nuremberg, and they are responsible for the character of the yummy droplet: the more of these the brewmaster uses, the more bitter and aromatic the beer will be. Constant quality and long years of experience are the key to this secret: only this gives the UERIGE its unmistakable flavor, which fans of the yummy droplet recognize immediately.

After the natural hops have been filtered out of the lauter tub, the hopped wort is pumped to the cool-ship to be cooled.

After all this heat, we now come to the opposite: cooling in thecool-ship. Before nature can once again become active during the fermenting process, we let the wort rest a little in the cool - ship.
Our cool-ship is made of copper and lies under the roof of the UERIGE, in the heart of Düsseldorf‹s old town center. Here the wort is gently cooled until it has reached a temperature of 55°C. During this process, the remaining cloudy sediment is separated. The second phase of cooling, when the wort reaches a temperature of 20°C, takes place in the drip cooler:
