"Anyone with a good cellar should consider buying a batch of Folie to lay down as it matures to become even more complex and rewarding than it is in its youth, making it one of our favorite beers."
'The Beers Of Wallonia, Belgium's Best Kept Secret'by John Woods and Keith Rigley (pp. 155-156)
"Citric with a little fruity grain and a distinct sour promise. When aged it suggests great depth of character and maturity. Almost a champagne-type character but with an injection of malt and a slight mustiness, especially with sediment."

SAISON BLIND TASTING PANEL
"...sour yeast nose with orange hints, amber-gold color and a large, white pillowy head. Lactic sour flavors with a lemony-tart finish, but still quite refreshing, especially if you like sour beers. the right food will complete this beer nicely."
